- Choose Ripe Avocados: Select ripe but not overripe avocados. (You can test this by gently pressing on them – they should yield slightly to your gentle pressure.)
- Prepare the Avocado: Cut the avocados in half and remove the pit. Scoop out the flesh and place it in a bowl. (The easiest way I’ve found to do this is: over a garbage bin, gently press on the skin over the pit and pop it out – trying to forcefully lodge a knife into the seed often leads to a hospital visit…don’t want that!).
- Add Lemon Juice: Adding lemon juice to the avocado flesh will help prevent browning. About one tablespoon of lemon juice per two (2) avocados works well. If you’re really averse to the lemon taste, try one teaspoon per two (2) avocados.
- Mash the Avocado: Mash the avocado flesh with a fork until you achieve the consistency you’re going for.
- Portion the Avocado: Portion your puree into usable amounts. We recommend using a silicone ice cube tray with a lid for small portions and freezer-safe bags for larger amounts.
