How to Make Honey Roasted Carrots

Step 1: Start by preheating your oven to 425Ā°F (220Ā°C), line the baking sheet with parchment paper, slice your carrots (batons or rounds on the diagonal are perfect), and then measure out all your other ingredients.
Can I Use Frozen Carrots?

Step 2: Place the sliced carrots, olive oil, honey, garlic, parsley, and salt in a large bowl. Toss or stir them until they’re thoroughly coated.
Step 3: Transfer the carrots to your lined baking sheet and arrange them in a single layer. Bake for 25 minutes, stirring or tossing at least twice to get an even bake.
Step 4: Remove the carrots from the oven and place them in the bowl again. Add 2 tbsp honey and 1 tbsp olive oil, toss or stir until coated. Transfer back to the baking sheet and bake for another 5-10 minutes.
Step 5: Remove your warm, golden, glazed carrots from the oven, plate them, garnish with parsley, serve & then enjoy!

- Herbs and Spices: Experiment with different herbs and spices to change the flavor profile. Try dried thyme or rosemary (great for the holidays!).
- Sans Honey: If you don’t have honey or prefer an alternative, you can try agave nectar, or even maple syrup for a different flavor.
- Additional Vegetables: Feel free to add other vegetables to the mix, like red onions, parsnips, or sweet potatoes, to add variety and color.
- Spice It Up: If you like a little heat, you can add a pinch of red pepper flakes or some minced fresh chili pepper.

Freeze it Again?
If you used raw frozen vegetables for this dish it’s okay to freeze it one more time. That’s because, generally, you can freeze food once raw and once again cooked.
Refrigerate: Transfer your delectable honey-roasted carrots to an airtight container once completely cooled. Safely store them in the refrigerator for 3-4 days.
Freeze: Cool the vegetables thoroughly. Place them in a freezer-safe container or bag, removing as much air as possible. Store frozen for up to 3 months.
Reheat: For best results, place in a preheated 190Ā°C (375Ā°F) oven for 8-10 minutes. Watch them carefully or they’ll crisp too much. Alternatively, you can use a microwave, but with this method they’ll go a little soggy and change the texture.
