How to Make Easy Chorizo Chicken Stir-Fry

Step 1: The prep for this dish is critically important if you want to be done on time. Get the rice started immediately! Thinly slice your chicken and chop the chorizo into bite-sized pieces. Deseed the red pepper and chop into strips. Finely slice 1/2 a leek (I prefer on a diagonal…also known as a “bias cut”). Measure out all the other ingredients you’ll need.
Step 2: First up are the meats! Heat the Tbsp of oil in a frying pan over high heat. Add the chicken strips and fry them (stirring regularly) for 3 minutes. Add the chorizo and cook it all together for an additional 2 minutes. The chicken should be a light golden color when done. Leaving as much of the meat oils as possible in your frying pan, remove the meats and set them aside.
Step 3: In the same frying pan add the red pepper and cook it for 2 min, stirring frequently.
Step 4: Now add the kale and leek pieces. Cook together for 2 min, stirring frequently, until the kale leaves start to wilt at the edges.
Step 5: Drizzle the soy sauce and red wine vinegar over your vegetables and then stir in the chorizo and chicken you set aside earlier. Be sure to thoroughly coat all the ingredients. Cook together for 3 more minutes.
Step 6: Your rice should be ready just as you finish up the stir-fry. Portion out a hearty serving of rice as a bed for your stir-fry. Add your chorizo chicken stir-fry on top and then garnish with a few leek slices and sesame seeds if desired. Enjoy!

Storage
Freeze it Again?
If you used raw (or blanched) frozen vegetables for this dish it’s okay to freeze it one more time. That’s because, generally, you can freeze food once raw and once again cooked.
Refrigerate: Your Chorizo Chicken Stir-fry can be refrigerated in an airtight container for up to 4 days. Don’t forget to let it cool completely and then remove as much air as possible before refrigerating.
Freeze: You can freeze the stir-fry for up to 3 months. We’ve found it’s best to use heavy-duty freezer bags to prevent freezer burn. It’s best to freeze the rice and stir-fry separately.
Reheat: Regardless of using the microwave or rangetop instructions below, transfer the frozen stir-fry from the freezer to the refrigerator the night before you intend on using it (or before you leave for work in the morning).
Microwave
- Place the thawed stir-fry in a microwave-safe dish.
- Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
- Microwave on high for 2-3 minutes, stirring halfway through the heating time.
- Check the temperature of the chicken to ensure it is heated through before serving.
Rangetop
- Add a Tbsp of oil to a frying-pan.
- Once the oil is hot, add the thawed stir-fry to the pan.
- Stir-fry for 5-7 minutes, or until heated through, stirring occasionally.
