How to Freeze Truffles

Truffles are delicate and need to be treated carefully when it comes to freezing. Too much moisture is a nightmare for truffles and the quickest way to spoil. If you plan to freeze truffles, we have outlined a couple of options for you to choose from:

How to Freeze Truffles Individually

This is the first and more straightforward approach to freezing truffles. In short, it involves wrapping the truffles to protect them from freezer burn before placing them into the freezer:

  1. Wrap: Wrap your truffles individually in baking paper followed by tin foil. Make sure they are wrapped well to protect them from the air in the freezer and from any moisture.
  2. Bag Up: Pop the wrapped truffles into a sealable freezer bag. Squeeze out as much air as you can from the bag. Seal the bag tightly.
  3. Freeze: Label with the date and the name of the contents. Put the bag into the freezer.

How to Freeze Truffles in Fat

If you want to ensure that the air cannot get to your truffles, submerging them in fat is a great option – not healthy, though! For this method, you will need some containers with lids. The container only needs to be slightly larger than your truffle.

  1. Place Into Containers: Pop a truffle into each container. You’ll want to use one container for each truffle.
  2. Cover with Oil: Cover with oil or fat; duck fat works well. This helps create a barrier from the air and protect the truffle. Put the lid onto the container.
  3. Freeze: Label with the contents of the container and the date. Put the container into the freezer to freeze.

3 Tips for Freezing Truffles

Now you know how to freeze it, we’ve got our 3 top tips which we strongly recommend following when freezing truffles to have the best results:

Seal
Air is your truffle’s main enemy when storing it in the freezer. That is why sealing them in oil or fat before the freezer is a great way to provide a barrier between your truffles and the air.

Grate from the Freezer
If you want to grate fresh truffle over your meals, don’t bother to thaw it beforehand. Grab from the freezer, grate over your dinner and return to the freezer. This will not work, for obvious reasons, with truffles stored in oil.

Try Not To
Ultimately, truffles are a lavish, expensive ingredient, not one you should be tossing into the freezer. If you can help it, avoid freezing them in the first place.

How Long Can You Freeze Truffles?

You can freeze your fresh truffles for up to three months. If you can use them quicker than this, you will experience less loss in the distinctive aroma and flavour.

Make sure you have followed the methods outlined above to keep your truffles protected while in the freezer.

How Long Will Truffles Keep in the Fridge?

In the fridge, truffles can last for 1 to 2 weeks if stored correctly. However, after just 5 days, the strength of their flavour and aroma can drop by half, which is why you must use your truffles when they are as fresh as possible.

How Do You Defrost Truffles?

If you plan to shave or grate your truffles over a meal, then you may not need to thaw them out at all. When adding the final flourish to your meal, grab your truffle and grate it over the dish.

Wrap it up immediately and pop it back into the freezer until you need it again.

To thaw out, you should pull the truffle from the freezer, pop it into a bowl in the fridge, and defrost slowly for a few hours. This will help maximise the quality of the truffle.

Can You Refreeze Truffles?

No, we wouldn’t recommend you refreeze truffles that has been thawed out completely. You may find that the truffle would be spoiled.

However, if you have kept your truffle frozen to grate it over your recipe, you can pop it straight back into the freezer before it thaws out.

Do Truffles Freeze Well?

No, truffles are one product that doesn’t freeze exceptionally well. Although they can be frozen and still be enjoyed, they will lose some of the quality that makes them delicious.

The most noticeable change is the aroma, and it is this distinctive aroma that really makes your meal magical when added. So, only freeze your truffles if you are sure you can’t use them up before it goes bad being kept in the fridge.
