Truth be told, this isn’t an authentic Tarte Tatin that involves baking the whole tart in the tin with the pastry draped over the top. Unfortunately, this will not work for freezing if you plan on freezing it uncooked.
Instead, you’ll have to caramelise the apples before adding the pastry.

Divide your Tarte Tatin into portions and wrap each one individually in two layers of cling film. - Freeze Once
Pop the slices of wrapped Tarte Tatin onto a flat baking tray and put this into the freezer to freeze for a few hours. - Bag Up
Once the Tarte Tatin has frozen then you can remove them from the freezer and baking tray. Pop them into a large freezer bag or container and seal it tightly. - Freeze Again
