While there’s no doubt that summer pudding is best enjoyed when fresh, you can freeze it for up to three months.

This is ideal if you need to use some kitchen ingredients up for whatever reason and have decided to make a bigger batch of pudding than you can eat in one sitting. 

The good news is that freezing summer pudding is relatively straightforward, and here are the steps that you need to take: 

  1. Prepare
    Prepare your summer pudding by following your chosen recipe. We’d recommend adding it to a freezer-safe tin at this stage, so you don’t need to transfer it from your crockery to a suitable container. 
  2. Wrap
    Once your summer pudding is ready, wrap it tightly in cling film. It’s best to double wrap it if you can spare enough cling film, as this will protect it from freezer burn. 
  3. Label and Freeze
    Write today’s date and the use-by date on the pudding and place it on a flat surface in the freezer. Remember, you can freeze summer pudding for around three months.

Leave Overnight
The secret to preparing a delicious summer pudding is to leave it in the fridge overnight. Once you have prepared it, cover your pudding with a plate and add a weight (a can of beans will do the job) as this presses the mixture own.

Throughout the night, the mixture will have pressed into the bread, leaving you with a delicious summer pudding that is ready to enjoy. You can then eat or freeze it, whichever you prefer.

Freeze Leftover Fruit Separately
If you have some leftover fruit that you haven’t included in your summer pudding mixture, you can bag it up and freeze it separately. Summer fruits freeze really well and are a great addition to smoothies and fruit juices. 

Stick With White Bread
While you can technically use different types of bread in your summer pudding recipe, we’d always recommend opting for a white loaf. This will ensure your dessert is sweet and delicious, as wholemeal loaves aren’t typically as flavoursome when soaked in summer fruits.

You can freeze summer pudding for around three months. If you leave it for any longer than this, you will find that the ice crystals that form during the freezing process might cause the pudding to change texture.

Leaving your pudding in the freezer for too long may also affect its taste, so it’s best to use it within this timeframe. If you plan on eating your summer pudding within a few days, you can store it in the fridge for three days.
