How to Freeze Roulade
Freezing roulade isnāt too tricky, but we end up mixing a couple of techniques to ensure the roulade is well-preserved in your freezer. Follow our steps to make sure you nail it the first time!
- Place on a Tray: Line a baking tray with greaseproof paper or baking paper, ensuring there will be no point at which the roulade would touch the tray without touching the paper, then pop the roulade on the tray.
- Freeze: Freezing the whole roulade is a great way to be sure that you make it a good texture for firmly wrapping. Flash-freeze it on the baking tray for one to two hours or until itās solid and doesnāt get squashed when you press it gently.
- Wrap: Remove the solid roulade from the baking tray, and transfer it to a sheet of cling film. Tightly wrap the roulade around, removing any excess air as you go.
- Freeze: Label the roulade with the correct date to avoid leaving it for too long, and then transfer it to the centre of your freezer.

Thaw Before Slicing
If you try to slice through the frozen roulade with a serrated blade, you will likely end up crumbling it on the chopping board. Avoid that by totally thawing it before you slice it with a sharp, straight blade.
Consider the Water Content
The higher the water content, the greater the risk of freezer burn. If youāre freezing jam, or something similar, the water content might turn into ice, leading to freezer burn in the roulade. You could, instead, freeze more conventional whipped cream.
Double Wrap
Wrapping the roulade in two layers of cling film can lead to more effective protection from freezer burn since youāre creating a thin layer of air that will insulate the roulade slightly.
How Long Can You Freeze Roulade?
You can freeze roulade for up to 1 month. The reason that we wouldnāt recommend any longer than this is that the roulade contains a lot of tiny air bubbles from the process of baking.
These tiny air bubbles can condense and freeze, given enough time, which would likely lead to a freezer-burned final meal. This is certainly not ideal, as it would ruin the texture of your dessert!

You can keep a roulade in the fridge for 2 to 3 days. It should be wrapped tightly in clingfilm and then placed on a plate.
