Quesadillas are an authentic Mexican classic. One of the best things about quesadillas is that theyā€™re versatile and can be made with various ingredients. However you enjoy your quesadillas, you might wonder what to do with any leftovers you have?

Yes, you can freeze quesadillas for up to 2 months. Regardless of the filling, you will need to freeze quesadillas in layers (separated by a baking sheet) before you transfer them to a freezer-safe bag to ensure they donā€™t stick together.

How to Freeze Quesadillas

While itā€™s perfectly possible to freeze both uncooked and cooked quesadillas, weā€™re going to assume that you have some leftovers that you want to place in the freezer and reheat later.

This is great for people who donā€™t have a huge appetite and canā€™t manage multiple quesadillas in one sitting. Below are the steps you need to take to freeze quesadillas: 

  1. Allow to Cool: Set your leftover quesadillas to one side and allow them to cool completely to room temperature.Ā 
  2. Slice: If you havenā€™t done so, slice your quesadillas into individual serving sizes before freezing. This makes your life a lot easier when you thaw your quesadillas, as you can defrost only the required portion at any given time.Ā 
  3. Place on Baking Parchment: Position your sliced quesadillas side-by-side on a sheet of baking parchment, covering a tray. Then, transfer your quesadillas to the freezer for a couple of hours until theyā€™re frozen solid.Ā 
  4. Remove and Transfer to a Freezer-Safe Bag: Once your quesadillas have frozen solid, remove the tray from the freezer, and transfer them to a freezer-safe bag. You should also wrap them in cling film to offer extra protection from freezer burn and to keep the ingredients secure.Ā 
  5. Label, Seal and Freeze: Write the date you prepared the quesadillas, as well as their use-by date, on the front of the freezer-safe bag, before sealing and transferring to the freezer. Remember, you can freeze quesadillas for around two months.Ā 

3 Tips for Freezing Quesadillas

Now you know how to freeze them, we’ve got our 3 top tips which we strongly recommend following when freezing quesadillas to have the best results:

Freeze Uncooked
You can also freeze uncooked quesadillas; if you know in advance, you wonā€™t be able to eat a whole serving to yourself. Simply follow the steps listed above (missing out on step one), and youā€™re all set. Some people prefer doing it this way, as it can result in fresher tasting quesadillas once thawed and cooked.Ā 

Use Hard Cheese
When selecting the cheeses to include in your quesadilla, be mindful that hard cheeses (such as cheddar) freeze much better than softer cheeses or those with high water content. If youā€™re freezing uncooked quesadillas, you could always leave the cheese out before freezing them if youā€™re worried about their consistency. 

Avoid the Microwave
When reheating your quesadillas, itā€™s better to oven-bake them rather than warming them through in the microwave. Reheating quesadillas in the microwave can make them go soggy, something weā€™re sure you will want to avoid!Ā 

How Long Can You Freeze Quesadillas?

You can freeze quesadillas for around two months. 

This is true for cooked or uncooked quesadillas. If you have leftovers that you think you might eat within a couple of days of cooking them, you can wrap them well and place them in the fridge instead of freezing them.

How Long Do Quesadillas Last in the Fridge?

Cooked quesadillas can be kept on a covered plate in the fridge for up to 3 days. Beyond that, the contents may go bad so should be thrown out.

How Do You Defrost Quesadillas?

To defrost quesadillas, remove them from the freezer the night before you plan to enjoy them and transfer them to the fridge. They will be perfectly thawed and ready to heat by the following day.

If you want to speed the process up, you could always defrost them in the microwave, but be careful not to reheat them for too long, or they will go soggy. We recommend reheating quesadillas in the oven, but itā€™s best not to reheat them straight from frozen. 

Can You Refreeze Quesadillas?

We wouldnā€™t recommend reheating quesadillas after theyā€™ve been thawed. Because theyā€™re often filled with ingredients like cheese, egg, and meat, you need to be super careful with quesadillas so you donā€™t upset your stomach!

Slicing them in preparation for the freezer ensures you can take out an appropriate serving size whenever you fancy a quesadilla, meaning you donā€™t need to worry too much about wastage. 

Do Quesadillas Freeze Well?

Providing theyā€™re well wrapped, and you freeze them initially on a tray before transferring them to a freezer-safe bag, quesadillas freeze well.

So, if youā€™ve made too much for your Mexican feast, you can freeze uncooked or cooked quesadillas and enjoy them within two months of preparing them.Ā

Ingredients

  • 1tbsp Olive Oil

  • 1 Onion, Finely Chopped

  • 1 Red Chilli, Diced

  • 4 Cherry Tomatoes, Finely Chopped

  • 2 Garlic Cloves, Diced

  • 5 Spring Onions, Finely Chopped

  • 1tsp Ground Coriander

  • 1tsp Paprika

  • 400g Canned Sweetcorn, Drained

  • 2 Limes, Zest Only

  • 4 Tortillas

  • 50g Cheddar, Grated

  • 50g Mozzarella, Grated

Directions

  • Heat the oil in a large frying pan over a medium heat then add the onion and fry for 10 minutes with a pinch of salt until it has softened.
  • Add the chilli, cherry tomatoes, garlic and spring onions along with the ground coriander and paprika then cook through for a couple of minutes before adding in the sweetcorn and lime zest. Give it a taste and add more paprika, salt, black pepper to taste.
  • Pile some of the mixture across 1 tortilla, almost to the edge, then top with a mix of cheddar and mozzarella followed by another tortilla. Repeat for the remaining tortilla.
  • Heat a frying pan over a high heat then when scorching hot, carefully place the tortilla into the pan. Push the tortilla down to get the two to glue together in the pan. After a couple of minutes, carefully flip it to cook on the other side.
  • Remove from the pan then cut up into wedges and repeat for the remaining assembled quesadilla.
