  1. Allow to Cool: You must allow your pasta sauce to cool before trying to freeze it. Once your sauce has been cooked for the desired time, remove it from the hob. It’s a good idea to transfer it into a fresh container to help it cool down quicker.
  2. Portion Out: It’s helpful to split your pasta sauce into portions before you freeze it, as this means you don’t have to defrost it all at once. You can either use Tupperware containers or resealable freezer bags. Just be sure to leave some space to allow for expansion.
  3. Seal: If you’re using a freezer bag, seal them up whilst removing as much excess air as possible. If you’re using Tupperware containers, seal them with lids ensuring they are airtight. If they’re not, wrap them in a sheet of cling film.
  4. Label and Freeze: Before transferring your sauce to the freezer, label the bag or container with the date the sauce was prepared and the date it should be used. It’s then safe in the freezer for up to 6 months.

Ingredients

  • 4tbsp Olive Oil

  • 2 Onions, Finely Chopped

  • 3 Celery Sticks, Finely Chopped

  • 3 Carrots, Finely Chopped

  • 3 Garlic Cloves, Crushed

  • 1 Bunch of Basil Leaves

  • 2 Bay Leaves

  • 1tsp Dried Chilli Flakes, Optional

  • 2tsp Sugar

  • 4 Tins Chopped Tomatoes

  • Salt

  • Black Pepper

Directions

  • Heat the olive oil in a large pan over a medium heat, and then add all the vegetables. Add a pinch of salt and then cook, stirring regularly, until the vegetables have softened a little.
  • Add the bunch of basil leaves, bay leaves and chilli flakes and stir before adding in all of the tomatoes with another pinch of salt, a pinch of sugar and a good seasoning of black pepper.
  • Fill one tin with water and tip this into the pan. Stir everything, then reduce the heat to low. Cook for 30 minutes, stirring occasionally.
  • After 30 minutes, check the consistency and then taste. Add another twist of black pepper or salt if required.
