If you’ve made a little too much muffin batter and don’t have the time or space to bake all the muffins it would make, then is there a way to store the batter for the longer term?

How to Freeze Muffin Batter

Freezing muffin batter is a little more complex than you might think. Follow our instructions to make sure you get it right:

  1. Make the Batter (Without Raising Agents): Not adding raising agents to the muffin batter that you make will help with the final muffins, as raising agents will only work when first added to the batter.
  2. Bag Up: Place the batter you’ve made into a freezer bag, trying to avoid spilling any on the sides. Spills, especially on the seal, will prevent you from getting a secure, tight seal on the bag.
  3. Remove Excess Air: Allow all of the batter to settle at the bottom of the bag, and then roll the small pool that has formed as though it’s a sausage, going slowly to avoid spillage.
  4. Seal: Seal the bag while it’s still rolled up, as that will prevent you from introducing more air into the bag.
  5. Freeze: Place the rolled-up bag at the edge of your freezer as though you’re lining your freezer with the bag of batter where it will keep for around 4 weeks.

Avoid Raising Agents
Raising agents only work once… The first time that you add them! This means you must ensure that you do not add raising agents to muffin batter before freezing it. Instead, add raising agents after thawing but before baking.

Get the Air Out!
Removing excess air is essential, as too much air within the bag will draw flavours out of the bag, leading to a poorer final muffin than you could have had.

Don’t Bother
Ultimately, muffin batter will not freeze for very long, whereas baked muffins will freeze for months and months. Instead of freezing the batter, just bake the muffins and freeze those.

During this time, the muffin batter may lose some texture and flavour, however, so make sure that you don’t leave it in there for any longer than you need to.

You can keep muffin batter in the fridge for around 3 days, especially if it has a leavening agent. When you’re ready to use it, allow it to come to room temperature and give it a quick beat.

The best way to defrost the muffin batter is to roll the bag out on a flat surface in your kitchen and allow the batter to sit at room temperature for around two to three hours.

This will allow the batter to be liquid, ideal for adding raising agents and baking.

Unfortunately, refreezing muffin batter is not a good idea. You’ll completely ruin the end result. Your muffins will become dense and dry.

You can, however, thaw frozen muffin batter, bake the muffins and then freeze the now-baked muffins with no problem.
