How to Freeze Gougeres

The key to freezing gougeres is not to pack them into the same bag without flash freezing them first, or they will stick together.Ā 

To ensure you freeze gougeres the right way, here are the steps you should follow: 

  1. Cool: Once your gougeres are ready to be served, remove them from the oven and leave them to stand at room temperature. It will take around one hour for the gougeres to cool sufficiently, so be patient. If you rush into freezing them, they will go soggy in the freezer!Ā 
  2. Flash Freeze: Line a tray with baking parchment and place the gougeres on top, ensuring theyā€™re well spaced out and not touching one another. Place the tray in the freezer and leave it in there for around two hours.Ā 
  3. Bag Up
    As soon as your gougeres have frozen solid, remove the tray from the freezer and drop them into a freezer-safe bag. Flash freezing them is important, as it will prevent them from sticking together in the bag.Ā 
  4. Label and Freeze
    Seal the bag and write todayā€™s date and the use-by date on the front, before placing the bag in the freezer. Remember, you can freeze gougeres for around three months.

As such, take the time to cook them first and bag up your leftovers once they have cooled.

Only Freeze Them Once
You should only freeze gougeres once. Although cheese is usually okay in the freezer, you risk spoiling its consistency the more times you freeze it.

As such, weā€™d advise you to freeze your gougeres in smaller portion sizes, so you can easily remove the right serving at any given time.

Thaw in the Fridge

No, we wouldn’t recommend refreezing gougeres. This is because the cheese within might spoil if you freeze it more than once and you need to be careful when dealing with dairy.
