Home bakers tend to make use of two types of fondant for their creations – rolled and quick-pour fondant. Rolled fondant has a dough-like consistency and is the most common type available for purchase in stores, while quick-pour fondant is nearly always homemade.

When it comes to storage, you might be wondering if it’s safe to freeze fondant icing?

Yes, you can freeze fondant icing. Fondant icing can be frozen for around 1 month. Quick-pour fondant icing can be added to a freezer-safe container, sealed, and frozen for up to four weeks. You shouldn’t freeze or refrigerate rolled fondant.

How to Freeze Fondant Icing

Rolled fondant icing can’t be frozen because the moisture content affects its consistency and texture. However, it is possible to freeze quick-pour, homemade fondant icing, and we introduce the steps for you to follow below:

  1. Wrap Tightly
Add your quick-pour fondant to tough cling film and wrap it well, ensuring there are no gaps or tears in your wrapping.
  2. Add to a Freezer-Safe Container
Once your quick-pour fondant icing is well wrapped, place it in a freezer-safe airtight container, and seal the lid.
  3. Label and Freeze
Write the date that you prepared your fondant icing, as well as its use-by date, on the lid of the container and place it in the freezer. Remember, you can freeze fondant icing for around one month.

3 Tips for Freezing Fondant Icing

Now you know how to freeze it, we’ve got our 3 top tips which we strongly recommend following when freezing fondant icing to have the best results:

Don’t Freeze or Refrigerate Rolled Fondant Icing
Rolled fondant icing should not be refrigerated or frozen, as it will ruin its texture and consistency. If you have leftover rolled fondant, you should wrap it well and place it in an airtight container before storing it at room temperature.

Store Quick-Pour Fondant Icing in the Fridge
Most home bakers store quick-pour fondant in the fridge, as opposed to the freezer. When wrapped well, your fondant icing should last for up to a week in the fridge, so if you plan to bake within that time frame, you can save yourself the hassle of freezing it.

Reheat Slowly
After you’ve defrosted your quick-pour fondant icing, you will need to reheat it slowly and gently until it reaches the consistency where it can be poured on top of a cake. Reheating it too quickly will cause you issues when it comes to topping your dessert.

How Long Can You Freeze Fondant Icing?

You can freeze quick-pour fondant icing for around one month.

As mentioned, rolled fondant icing shouldn’t be frozen at all. Generally speaking, it’s best to use fondant icing as soon as you can, as refrigerating or freezing it can affect its texture and consistency.

How Do You Defrost Fondant Icing?

When you’re ready to remove your fondant icing from the freezer, you will need to allow it time to thaw before reheating it and adding it to the top of a cake. You can’t, after all, add a block of frozen fondant icing to the top of a cake!

Remove the icing from the freezer and allow it to thaw in the fridge overnight. Then, you should heat it slowly once it has thawed until it reaches the desired consistency. It’s important that you take your time when reheating fondant icing, as it’s easy to ruin it by heating it too quickly.

Can You Refreeze Fondant Icing?

Quick-pour fondant icing should only be frozen once. Thawing and refreezing fondant icing will mess with its moisture content and is likely to affect its desired texture and consistency.

Obviously, as rolled out fondant icing shouldn’t be frozen in the first place; you definitely shouldn’t refreeze it! The best thing to remember about fondant icing is that it’s fairly delicate, and it isn’t a great cake topping to store for future use.

Does Fondant Icing Freeze Well?

Quick-pour fondant icing freezes reasonably well. If you wrap it tightly and store it in an airtight container, you shouldn’t notice a great deal of difference in its taste and texture when it comes to enjoying it. But you need to take care when you’re reheating thawed fondant icing, as it’s easy to heat it too quickly and ruin it.

As we’ve mentioned throughout, you shouldn’t freeze or refrigerate rolled fondant icing, and this popular shop-bought type of icing should only ever be stored at room temperature.
