When it comes to freezing a sweet such as barfi you are best freezing it already portioned out to grab out just what you need. When it comes to freezing it, use this simple method:
- Place on a Baking Tray
Pop your barfi onto a baking tray. Keep the portions separate and not touching. - Flash Freeze
Put the baking tray into the freezer and freezer for a couple of hours. - Transfer to Container
When the barfi has frozen, transfer it from the baking tray into a freezer-safe container with a lid. If you donāt have a suitable container, then you can wrap it in foil instead. Then, pop the wrapped barfi into a freezer bag. - Final Freeze
Label the container with the date and contents. Pop the whole thing into the freezer until you need the barfi.

Don’t Refreeze It
As you’ve probably guessed by now, refreezing barfi is a big no-no. Instead, focus on ensuring you can defrost the amount you need at any one time to avoid refreezing. Refreezing will dramatically (and negatively) impact the texture.
How Long Can You Freeze Barfi?
Barfi freezes fairly well for up to three months. This is perfect if you have lots of leftovers after a special occasion or want to get ahead with your next celebration and have your sweets cooked and frozen in advance.
How Do You Defrost Barfi?
To defrost your barfi, you need to take it out of the freezer and pop it onto the kitchen side to thaw out. Keep it covered while it thaws out and keep it at room temperature.
Once it has defrosted, then you do need to eat it within that day.
This isnāt a sweet that you can speed up the thawing process, unfortunately. So, you are stuck waiting for it to thaw out fully. But donāt worry, it shouldnāt take too long to thaw out.
Portioned barfi should be ready to eat within two to three hours from pulling it out of the freezer.

No, it isnāt recommended that you refreeze barfi. Freezing, thawing, heating and all the processes involved change the structure of food, and the more times you freeze, the more chances you are giving the food to spoil or become inedible.
