How to Freeze Angel Cake

Freezing angel cake is simple, just like any other type of cake. Letā€™s get started:

  1. Separate the Sponges: Separating the sponges allows you to wrap them carefully, rather than allowing them to be pressed together, which would likely lead to damaging the cakes.
  2. Wrap Individually: Wrap each sponge in baking paper individually. This is easier said than done, of course, but we recommend keeping things as simple as possible – a long rectangle will suffice, which you can wrap up and over the sponge cake.
  3. Stack and Wrap: Stack the wrapped sponges on top of one another, but donā€™t compress them to make them sit more neatly. That will undoubtedly damage their texture. Once stacked, wrap the entire pile in foil.
  4. Freeze: Freeze the sponges in the centre of the freezer, where theyā€™ll be as far as possible from the frost front at the edge of the freezer.

Avoid Icing
The frosting and icing of the angel cake is one of the most commonly seen features, especially the hard white and pink icing on top of the cake. Donā€™t do that before freezing, as it will likely dissolve in the freezer.

Expect Colour Changes
Itā€™s pretty likely that the colour of the sponge will become a little duller in the freezer. This is mainly because the dye is water-soluble; some of that can be dissolved and evaporated in the humid freezer environment.

Expect Textural Changes Too
The tiny air bubbles throughout a cake give it the unique texture you might expect. These air pockets in the freezer can condense to water and freeze to ice. The final cake might have a slightly degraded texture as the air pockets have expanded, crushing some smaller bubbles.
