How to Make Smoky Cajun Roasted Vegetables

Step 1: Preheat your oven to 220Ā°C or 200Ā°C fan (425Ā°F or 400Ā°F). Line your baking sheet with parchment paper (or foil).

Should You Thaw Frozen Vegetables Before Roasting?
No, you don’t have to. You can roast frozen veggies directly. However, it might take slightly longer compared to fresh veggies. Dusting off any excess ice crystals can prevent them from becoming soggy and is a pro move.
Step 3: Add the mixed vegetables to your bowl and toss them with olive oil until fully coated. Now add your Cajun seasoning, smoked paprika, salt, pepper, and minced garlic. Toss again until coated evenly.
Step 4: Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper (or foil) in a single layer.
